Missy's Favorite Blueberry Pancakes

About the Recipe

*Do not cook without an adult.


  • 2 cups all purpose flour

  • 4 tablespoons sugar

  • 4 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon salt

  • 1 1/2 cup of milk

  • 2 eggs

  • 4 tablespoons vegetable oil

  • 1/2 teaspoon vanilla extract

  • 1 cup blueberries


Step 1

Whisk together flour, sugar, baking powder, baking soda, salt, milk, eggs, vegetable oil, vanilla extract until combined smooth.

Step 2

Spray non stick pan with vegetable oil spray (Momma sometimes melts butter in the pan instead), heat over medium heat.

Step 3

With a cooking spoon or ladle, spoon mixture into pan making 3 separate pancakes.

Step 4

Drop a few blueberries onto each pancake.

Step 5

Cook until tops of each pancake begin to bubble and edges begin to turn golden brown, flip with spatula and cook other side until golden brown.

Step 6

Plate and top with extra blueberries, serve with maple syrup.
